RICK'S AWESOME CHILI
from Bryon, a Cowboys Tailgater

1/4 cup vegetable oil
3 lb. beef chuck or round, 1/4" cubes
1 onion, finely chopped
4 cloves garlic, chopped
1 TBL paprika
5-6 TBL chili powder
1 TBL ground cumin
1 tsp dried oregano
1 8oz. can tomato sauce
1 tsp salt
1 cup water
2 jalepeños seeded, chopped (4 if you're from Texas)
(can add 3 cups pinto beans, if you want beans)

Heat oil on med/high.  Cook beef until brown.  Add onion/garlic...sauté 5 minutes.  Add paprika/chili powder/cumin/oregano....stir for 3 minutes.  Add tomato sauce/salt/water/jalepeños and beans if you want. 

Bring to boil.  Lower heat and simmer for at least 2 hours, adding water if needed...

Serve with cheese on top and french bread and cold beer....
