precooked Italian sausage 2 lg. green peppers 2 lg. onions Slice
peppers and onions in julienne strips. Saute until soft and transparent
and sausage is brown. Serve on hot Italian buns. ITALIAN SAUSAGE
& PEPPERS 2 lbs. Italian sausage (sweet or hot) 1 lb. fresh mushrooms,
sliced 2 green peppers, sliced & seeded 1 lg. onion, sliced 1 c.
red burgundy wine 1 (32 oz.) can sliced tomatoes (or whole tomatoes,
sliced) 1 c. grated cheese (Romano or Parmesan) Steam sausage 10
to 15 minutes, remove from skillet, rinse skillet, add a small amount
of olive oil, cut sausage links into 3 pieces. Brown and remove
from skillet. Add peppers to same skillet (do not rinse), stir quickly
as peppers stick. After 3 minutes, add onions and mushrooms. Saute
until onions are transparent. Add cup of red wine, scraping pan
as you stir. Add tomatoes, salt and pepper to taste, add cheese
and stir before serving. Place in a large bowl and top with a little
extra grated cheese. Serve with Italian bread or as a sandwich on
sub buns. ITALIAN SAUSAGE & PEPPERS Original recipe for 4 servings.
Ingredients scaled for 4 servings. Preparation Time: 35 TO 40 MINUTES.
2 lb. Italian sausage; hot, sweet or combination 2 tbsp. olive oil-vegetable
oil, if needed 2 whole med. onions, sliced crosswise 2 whole cloves
garlic 4 whole green pepper, sliced lengthwise, cut into narrow
strips Set a large skillet (or wok) over medium-high heat. Separate
the sausage links and prick each link several times with a fork.
Place the sausages in the skillet and cook, turning occasionally
until well-browned on all sides, 15 to 20 minutes. With a slotted
spoon, remove the sausages to paper towel to drain. (You may also
broil or grill the sausages.) In the same skillet, saute the onions,
and the garlic in the drippings (add olive oil if drippings are
scant) until they are limp, about 3 minutes. Remove the garlic.
Add the peppers and continue cooking until peppers have softened,
about 5 minutes. Slice the sausages into 1-inch chunks. When the
peppers are soft, add the sausages to the skillet. Stirring to combine,
simmer the sausage and peppers for about 15 more minutes. Serves
in a dish with Italian bread or serve in Italian roll. NOTE: This
dish may also be served over spaghetti or linguine topped with Italian
tomato sauce. |
